Background: "Appassimento" refers to the process of naturally drying grapes. The harvested grapes are usually exposed to the sun in a well-ventilated space, and the air-drying action is used to obtain concentrated glucose and unique flavor substances. The famous Italian wines Amarone and Recioto and Passito both use this brewing technique.The grapes for this wine are naturally dried on the vines for about 30 days before being picked. The water slowly disappears from the grapes, and about 35% of the weight of the grapes evaporates, perfectly concentrating the fruity flavor and sugar.

 

Tasting Notes:Intense and aromatic berry aromas with rich aromas of ripe dried fruits and vanilla. It has soft tannins, a round taste, and a full-bodied wine. It is suitable for pairing with hard cheese and barbecue, or it is suitable for drinking alone.
