Food Pairing:Ideal wine with typical dishes of the Piedmontese tradition, with semi-hard cheeses and cured meats.

Winemaking:The grapes are harvested, by choice, eighteen days later than normal, to reach full ripeness and with a lesser use of sulphites. The wine is vinified in small concrete tanks and is subjected to manual punching down for 32 days. The malolactic fermentation and aging are in used French tonneaux, to keep the fruit and the quality of the wine intact. Once bottled in August, the wine rests for about 8 months before being placed on the market.


Tasting Notes:Ruby red color with violet reflections, nose has the usual fruity notes with hints of violet, blackberry and raspberry, the palate is dry, pleasantly fresh and harmonious.
