Winemaking:After being manually harvested, grapes were placed into concrete barrels where they fermented for 47 days with regular punchdowns of the cap. After primary fermentation was completed, the wine was racked into French oak barriques (50% new, 25% single use, 25% second use) where it was aged for 18 months. After its passage in wood, the wine was bottled by gravity and without filtration. It spent another 18 months resting in bottle before being released.
Tasting Notes:Red velvet cake, fresh sharpie, tobacco leaf, peppermint, Black Forest cake andcardamom, medium body; medium-plus acidity and low tannins. Packed with Maraschinocherry and hints of smoked wood. Very long finish.
