Background: Blanc de Blancs, literally translated as white in white in French, refers to champagne made with only white grapes. In Champagne, the most commonly used white grape variety is Chardonnay. The chalky soils of the region are therefore the most suitable for the growth of the Chardonnay grape variety and give the grapes a richer mineral content.
In general, blancs have more acidity, fine bubbles, and aromas of green apple and lemon, making them ideal for seafood and white mold cheeses, such as camembert.
Tasting Notes: Aromas of ripe peaches, toasted almonds and yellow fruit, medium to full-bodied. Fruity, lively acidity, charming character and expressive. This is a mature, rich champagne with strong appeal.
