Winemaking: Carbon dioxide maceration, no added sulfites

 

Background: Taratata uses grapes from the estate’s small plot called “Terrasses Bas”, where the soil is limestone and clay. They broke through tradition and restrictions and used the "carbon dioxide maceration" method, which is quite popular in the Beaujolais region, in Bordeaux.

This brewing method does not separate the skin from the pulp, but puts the whole bunch of grapes in a sealed and oxygen-free container; allowing the grapes to ferment from the inside out. Such wines usually have less tannins and are therefore suitable for immediate drinking.


Tasting Notes: Fresh and juicy red fruit aromas, slightly sour cherries and live apples, using carbon dioxide maceration, naturally fermented without added sulfites, expressing the most original Merlot.
