Winemaking:All parcels are processed and fermented separately utilising a variety of techniques. WIth Tempranillo, we only use the free-run juice and discard the pressings. Then it's fermented at 14-16°C. The Syrah and Nebbiolo are handled very oxidatively as there is no sulphur dioxide used at juice level. The juice is pressed without separation of free run and pressing juices and is then fermented in a mix of in-tank and in-barrel. All wine is fermented with the use of commercial yeast strains, which ensure the full amount of sugars are converted successfully in low-temperature environments. Our goal is to have finished parcels of wine that offers a variety of blending options for the bench. The key characters we look for in this rosé is structure, gentle phenolic presence and depth of flavour beyond just pure fruits. We look for more savoury complexities and spicy lifts on the nose. It is meant to be a serious wine.

 

Tasting Notes:Powerful, complex, and shaped like a Masserati, this rosé is produced from one of the best vintages and collection of vineyards. Only in the best year do we get the joy of including a tiny smattering of Vermentino into the blend, which adds an exotic level of complex aromas. Our signature traits of wild herbs, cranberries, and violets shine through with immense presence while the textural element is the most sophisticated we have witnessed to date. A wine that purrs with a generous after taste.
