Background：Grillo is a hybrid variety of Catarratto and Muscat of Alexandria. Its typical flavor is citrus fruit aromas such as grapefruit and orange, as well as the aroma of white flowers and thyme. The acidity is usually bright and moderate, and the taste is aromatic and rich.Greeno is one of the main white grape varieties in Sicily. Its high temperature resistance and high residual sugar characteristics are very suitable for making fortified wine, so it is also the main variety used in Marsala wine. In the 20th century, Catarratto was widely planted in large quantities, which once greatly reduced the planting area of ​​Grillo. It was not until recent years that local producers re-examined the importance of this variety and regained Grillo's status in Sicily.
