Background: Inspired by the desire to create a wine that harmonizes with and enhances the complex flavors of spicy Asian cuisines like hot pot, Eddie McDougall, founder of Flying Winemaker, wrote, "I traveled all over China and witnessed firsthand the incredible passion people have for hot pot." He continued, "While non-alcoholic beverages like plum juice are popular, and bottled beer is a traditional pairing, I realized there was a gap. There wasn't a wine specifically designed for the hot pot experience and the broader flavors of Sichuan cuisine." He wondered, why not introduce another taste experience to the hot pot table? Why not complement the spicy dance with a series of refreshing bubbles on the tongue? A tempting tango of ice and fire! Thus, a sparkling wine called Mala (Spicy) was born in this era of surprising food and wine pairings.


Tasting Notes:This wine exudes aromas of white flowers, pear, and white peach, with a smooth and approachable palate. The flavors are refreshing, like a pure interplay of fruity notes and minerality found in an orchard. It pairs well with seafood, Chinese cuisine, and spicy hot pot.
